Because what happens over time is that the lactobacillus, the beautiful fermenting microbes are kind of changing the state of your vegetable. It's really super healthy and it's one of the easiest ways to pickle. Of course, you could put in lots of different herbs to flavor it and garlic. And in about a week and a half you have some beautiful pickles to serve with any sandwich or any salad

But anyway, to answer your other question, I like to grow my own vegetables, and so I've grown my own tomatoes, cucumbers and herbs. But honestly, I've never pickled. And that's going to be probably my next project coming this spring because I love pickles and I love cucumber and making cucumber salad and so forth. So definitely now on my to do list. You. Hello. Thanks so much for sharing. I really enjoy pickled veggies, and I don't know why I always thought the pickle juice had to go in, but I didn't hear you say anything about pickle juice. Just salt and water. But I'm going to look at your recipe and just see because I do like to eat them and I always have veggies around and sometimes we waste stuff and I actually have a are pickled vegetables on my counter right now. So thanks for sharing
