But new research now suggests that ancient Romans were able to limit that oxidation using a pine resin coating inside the vessel. And they could control the temperature by burying the amphora, as some traditional georgian winemakers still do. It would at least have created a beautiful, dark yellow, amber colored wine, similar to the increasingly popular orange wines that are drunk today.
