The pressure inside the champagne bottle was higher than you'd imagine, going up to about what's known as six bars, or about 90 psi, with 1 bar being around the atmospheric pressure you find at sea level. Today's champagne is kept in bottles that can withstand up to 20 bars, or 290 psi, with a metal fastener that is often used to keep the cork in place
