I chopped them up and threw them into the stir Fry, and immediately because the pan was so hot, the little bits began to spatter and I took a deep breath and immediately started choking because it was I think some of the active heat in the chili pepper had vaporized and I was inhaling, but I quickly stirred it up, added in the vegetables. Let's see. It was broccolini and mushrooms and stirring it up, and I turned the exhaust fan on over my range

Tim, I missed this post of yours, but I just came across it and I laughed because what you call the Thai red chillies is the same red chili or in its green form we use in Indian cooking, and we wouldn't use three already. I can just imagine the level of spice your dish was the day I put two. My son opens every window in the house and airs the house out, saying, mom, you're killing me

I'm wondering when you Cook, do you leave the seeds in? I think I was hearing from another Indian Cook that. Oh, no. You don't need to take the seeds out. That's an American thing

Hey, Tim, no, we do not remove other seeds because the seeds is what adds the spice. If you remove the seeds, I suppose you can eat, you know, as many of these. And it's not going to be that bad. So yeah, we do not remove the seeds when we bye

Also, Tim, as I start thinking about the chilies, I wanted to share one recipe. We make this chili chutney. It's a chili cilantro chutney. And when we we make it, we take it with different things. But we just take, like, half a teaspoon of it because obviously or a teaspoon of it, because it's obviously spicy. So it's like a condiment on the side. But I'll share the recipes. If you get an opportunity, try it out

Spicy chutney sounds delicious!

Suda. That chutney sounds delicious. I've made a similar one with just using Jalapeno peppers, so much less heat. I'm going to try that. But as my wife says, especially with regards to substituting Chili peppers, do the math. I'm going to touch a picture of the Scoville heat unit here
