And so that really kind of ruined the taste of the candy. And so I I was thought like, what else can I use? What has flavor, sugar and color? And I thought, all right, koolaid packets. And this is what happened, is that I used a lemonade koolaid packet with no coloring and I didn't add any extra flavoring. And I used the teaspoon of the citric acid. And it looks really nice. It looks pretty

Sometimes it's candy, and if they can taste it and so on, and then they have to, the first round, do their best to recreate it. The chemistry involved, the taste, the temperatures, like, everything. And it's fascinating to sort of get an insight into whatever background they have on the science of these things and then how they tweak it to make what they're making. And anyway, I only mention it because I know nothing about

And it's also really validating when because people have asked me to make certain try to make certain types of candy, and I'm like, no, there's no way that you can make that without being in a factory. And that show actually validates. Like, someone says, like, make Gushers

You. Yeah. I kind of get obsessed with things I needed to work, and the only project that I started to make and I just totally gave up on is Swedish Fish, because Swedish Fish, they don't use gelatin. I'm trying to get the same texture. And Swedish Fish, I'm using a mixture of pectin and cassava. Cassava powder, that's what Boba is made out of, and it's vegetarian, and I can't get it to hold a shape

Welcome. Yeah. I've been called the Willy Wonka of East Nashville before. I had to listen to this a couple times because I am floored for I don't take compliments very well. I don't know what to say. I'm really good at giving compliments and meaningful compliments and support. But when someone gives me a compliment like that, I don't know what to say except from thank you. That means a lot. I'm going to have to sit on it a little bit more
